    This a beautifully colorful salad that would be perfect for a refreshing summer side. It does get awfully liquid-y though, with all the juices from the melon, so I'd be sure to do a little draining before presenting it or cut back a bit on the dressing.

    What a fresh & flavorful salad ~ a welcome change from old standard mayo based salads, potato, mac & coleslaw etc. I wasn't sure about the combo of veggies & melon while prepping, but WOW, is it delish!!! The only change for me would be to either add more cucumbers, radishes and melon for the amount of dressing the recipe made OR cut the dressing in half. There is more than enough dressing the way it is written. It is a summertime favorite for us.

    I knew this was a keeper recipe the first time I saw it. I have served it several times for guests and they all loved it too.

    I really liked this salad, but made a couple minor changes. First, I mixed the dressing in my blender as I had a hard time breaking up the mint jelly with a wisk alone. I also added the juice of 2 limes to the dressing, but I still think it could use more of the tart lime juice to balance the sweet mint jelly. I will experiment with 3 limes next time. Also, I chopped the mint and mixed it in, as R.R. did on the show... much better this way. I used plenty of salt & pepper too. With these minor adjustments, I think it gave it a bit of a flavor boast... so as not to be "bland" as some viewers claimed.

    This was so good. I was a little worried about the mint jelly. I thought the whole salad would taste like gum but it didn't. The sweet melon and mint flavors with the sharper lime, radish and onion worked really well. It was such a nice combo of flavors, really unusual. And my 7 year old happily polished off a great big bowl of it.
