My 11 year old is home sick from school and saw this on today's show. She begged me to make it for dinner so I ran to the store to get the stuff. Even with my slow chopping skills this took about an hour to have on the table. I put the onion in a minute or two after the garlic/peppers and let that brown a bit before I added the rest of the veggies. I let them cook about 30 minutes before I added the broth, etc. but it was still really fast. I love that the veggies are not soggy and still have a nice color to them. I rarely make soups from scratch, but this one will definitely become a family staple!

We go back to this again and again and again. It freezes great, so we make huge batches. Easy to sub for what's on hand or to add (right now I have a pot going with the ingredients in the recipe plus leeks, shallots, orange bell pepper, peas, and yellow summer squash because I had all of that in my fridge. My go-to quick dinner, thank you Rachael's mom!

This was VERY good. A great soup to have on a cold day!
Next time I make it, I will probably add more white beans and more zucchini. But this soup was definitely yummy. I especially loved the green beans in it!

We love this "stoup" in our family! It's tasty, quick, and healthy...what more can you ask for? As many others have suggested, I cut down on the red pepper flakes for the kids, but I've made this exactly as written and I've also improvised when I don't have something on hand. Either way, it works beautifully! I leave it a little thicker, and also cook the veggies until soft, so my 13-month-old has an easier time eating it. Both kids love it!

This is amazing. The only difference I made was to add more stock to make it a soup versus a stoup because I had guest and needed to stretch it out using homemade chicken broth and whatever was left in a container of vegetable stock I had purchased. Thats it. Followed everything else as is....and EVERYONE enjoyed it. So delicious, comforting and inexpensive.....try it you won't be disappointed.

Big soup fans in my house and this one is a keeper! I have made it twice now because it is simplier & faster than a homemade chicken or vegetable soup. Had it today with Rachel's Mediterranean Eggplant Steaks (did mine as Italian rather than mediterranean and it was a very filling meal!

This was absolutely delicious! Soup is so great this time of year, and this one really hit the spot : I followed the recipe to a T and grated some Pecorino over the top... Yum-O! Thanks Rachael!
