The orange zest added a great kick to the couscous. I'll definitely make this again. I segmented the oranges and used them in the Baby Spinach Salad with Mandarin Orange and Red Onion instead of the mandarin oranges. I made the Apricot Chicken and served it over the couscous. A great combination!

We gave Rachael Ray a run for her money last night when we made a great dinner in around 15 minutes! The star of the meal was this great recipe for Orange and Almond Couscous. In my hurry, I used whole orange pieces (cut up instead of the orange zest and but it turned out great this way. Also I added raisins, knowing these are always good in couscous.

To accompany the couscous, I steamed some broccoli with good grated cheese for seasoning, plus salt. Then we did a "wedge" of iceberg lettuce for each person with a great store bought Caeser dressing and carrots shaved on top. As Rachael would say, "Yum!" We were able to throw this all together in about 15 minutes. I will definitely use this recipes for a long time to come.

The almonds added a nice crunch texture to the couscous. This was pretty good. Nothing FANTASTIC, but nice to know in a pinch.

I must have done something wrong because mine turned out flavorless and dry.

I have couscous in my pantry all the time and enjoyed this variation. I think it could be improved even more by adding chucks of orange (not just the orange zest alone. I really love the fact that this recipe only takes 5 minutes to prepare...a plus for a busy person on the go!

I have never eaten couscous and liked it. But this recipe went far and above any expectations I had. So good.
