    Loved this recipe, my family are big fans of Cornice game hens so when I found this recipe I was so excited. It's really a very simple recipe, easily tweaked, and completely delicious! Surprisingly it reminded me a lot of the orange chicken from Panda Express (only slightly more grown-up and much healthier so needless to say this was a big hit. Will definitely be using this in the future.

    Wanted to find an alternative to Turkey. This is quick, easy and delicious!! It makes a beautiful presentation, too. I read the other reviews and marinated a couple of hours as some of you suggested. I used three hens and split in half instead of butterfly. I basted three times during cooking. Use lots of fresh rosemary!
    I will definately do this again for the holidays!

    We really enjoyed this dish-but- I wish the skin was a little crispier. I put the hens under the broiler for a few minutes-and that helped.

    I made this for Christmas dinner. It was just my husband and I and I thought the hens would be a nice touch and something different. They were easy to prepare and cooked quickly. I was not crazy about the sauce. I know I will make them again but look for another sauce to serve with them next time.

    Made this recipe after reading the reviews so I made some modifications...added minced garlic, marinaded for 30 minutes and let hens rest on counter for 15 minutes then made extra marinade and basted three times during the cooking process. Turned out wonderful! The rosemary made the house smell incredible. Definitely a new holiday tradition.

    The meat was dry (which may have been my fault but there was no flavor,
    I really wouldn't recommend it unless you mess with it substantially.

    i've been reading the reviews regarding the chicken being bland. I would like to try this recipe but was wondering if anyone has tried placing some of the marinade under the skin?

    I made this lastnight so my Husband and my Daughter wouldn't have to take me out for Mother's Day! I'm so glad I did, We Loved it... I did change it alittle. I marinated for an hour in the fridge with the orange consentrate, aged balsamic, Fresh and dried Rosemary, 4 fresh garlic cloves and I added garlic powder, and orange zest with the some juice from the orange. After the hour was up I put it on the countertop for 15 minutes. HINT: Don't put the Extra Vigin Olive Oil in the recipe, I tested one with it and that why alot of people said their hen was so bland! If your going to feed like 3 people make just 2 hens, Plenty Of meat for 3. If for 2 people cook 1 hen. Believe me my family can eat and they only ate a half of the hen. Another HINT: Chop up the Fresh Rosemary really good and I recommend even more Rosemary than what the recipe calls for. I love that fresh taste and look that the rosemary presents in this dish. Cut up orange slices and put one on top of the finished hen when it's done. It came out Beautifully and it was so easy ! Tammy Messer-Scroggs

    This was great..I added garlic. My husband hates cornish hens. He loved this. He got his white breast and I got all the good parts. Thanks
