    Wonderful recipe! It is a regular dish when i'm entertaining or taking a dish for pot luck. I added feta cheese for some added flavor and texture. EVERYONE asks for the recipe, and they're amazed to find out how easy it is.

    This recipe is light, refreshing and delicious. I got rave reviews from my guests who also went home with the recipe. Simple to make with a beautiful presentation. I left out the basil leaves because it was flavorful enough without. I did squeeze some fresh lemon juice and used a little extra of the olive oil. Make sure you salt the water well for the orzo. Also what helps to wilt the spinach is covering with foil when the orzo is placed on top.
