    For a Mother's Day brunch I wanted something with a bit more interest than the old stand by - hash browns.

    As always, Rachael Ray came through. This side was liked so well by the whole family that my dad called to ask for the recipe just two nights later to go with dinner.

    I know it seems so simple, but these oven home fries are so excellent they make an appearance with almost every meal I cook for family and friends. Easy, tastey, virsatile. "Yum".

    These turned out so good and was pleasantly surprised how easy this was in the oven. Usually I cook everything on the grill but now I know you can cook in the oven in half the time.

    These potatoes are not only so easy to make and wonderful to eat...they're also GREAT the next day if you're lucky enough to have some leftover to just throw them in a hot pan then throw in some eggs and scramble.
