I have never had a great recipe for fresh or packaged salmon filets. This recipe rocks and is soooo easy to make. if your family is on a health kick, this is the recipe you need to make for them! I highly recommend it.

This is one that went together in a snap! The relish was especially good on top of the fish.

I have to admit I modified the recipe. I used white wine instead of broth to poach the salmon. I found it to be a quick, easy and healthy way to cook salmon. I will have to try the relish next time (I served the salmon with hearbed oven roasted potatoes.

This was such an easy meal and it tasted wonderful. My kids gobbled up the salmon until the last bite was gone. We will definitely make this again.

This recipe is very good for frozen salmon. Poaching it in the chicken broth really helps with the fishy flavor often given from frozen salmon. I added a clove of garlic in stock to poach the salmon along with the dill stems. The relish was absolutley delish. I added the juice from half a lemon and it was great. Reminds me of the Persian salad often served as a starter. Very, very good, will make this recipe again.
