    This is the best salmon recipe I have ever tried. The cucumber relish really makes it great. I actually made this 2 nights in a row!!

    I was truly one of the hesitant ones to cook fish at home! My mother loves poached salmon and when I saw how easy this was I could not resist trying it. What a winner, it was quick, easy and my mother loved it!

    This was thoroughly enjoyed by friends and family. I would cook the salmon a little longer if using large pieces, but otherwise the flavor was excellent.

    Had my 91 year old Granny over last night, and she especially loved the relish. 6-year-old son prefers whitefish, so added some halibut to the poaching dish. That was good, too.

    I just watched the show and then read the recipe. I was surprised to see that the recipe doesn't mention that Rachael heated the sugar and vinegar until the sugar was dissolved, and then added it to the relish. It doesn't seem like it would turn out the same if it were not cooked.

    I never cooked fish before in my life because I usually don't like fish. My husband on the other hand loves fish. So I thought I would give this recipe a try. Oh My Goodness! I even like the salmon! My husband thought it was the best salmon he has ever eaten! He loved the relish on top! I used frozen salmon so the cooking time was longer and I had to use dried dill as I could not locate any fresh dill at the market today. I used a regular yellow onion as a could not find a vidalia. It all worked out great! Thanks Rachel for a great recipe and converting me to a salmon eater.
