I followed some of the other recommendations and mixed olive oil into the breading, rubbed a bit more onto the fish in the pan, then pressed the breading onto the fish. Roasted at 450 for 10 minutes, and it was perfectly cooked. Served it to fellow foodies, and they loved it. Next time I'll add more olive oil to the breading or spray it with oil once on the fish and hope the topping browns more evenly... the main reason I gave it 4 stars instead of 5.

I regret to report that I fall into the disappointed camp. The topping was not crispy, and not enough flavor to compensate for the blandness of the cod. I might try it again using the tip from another rating by adding olive oil to the breadcrumbs and increasing the temp and shortening the cooking time.

The fish did not crispe well....The taste of the herbs did not help the fish at all. I would not bake Cod Fish again.

As one reviewer suggested, I added a little olive oil to the breadcrumb mixture, and then tossed it with a fork. The consistency became kind of like a brown sugar, and it was a little tricky to bread it, so instead I brushed olive oil on the fish, put it in the baking dish, and then piled the breadcrumb mixture on top of the fish. But after baked (12 minutes @ 450, it was AMAZING and perfect! This is definitely one of my new favorites and I will be making it often because it's extremely quick (less than 10 minutes live cooking time, another 12 walkaway, easy, and healthy. Fantastic!

I usually love Rachel's recipes but this one was a bust with my family.

In an attempt to eat fish once a week I have a recipe box full of cod recipies...we sub tilapia for the cod but its a great replacement. I was pleasantly surprised with this after reading some of the reviews, it was really good and I'm not a huge fish fan. I did salt, pepper, and squeeze lemon on the fillets before crusting them, drizzled a tiny amount of butter on the top to promote crusting, then roasted them at 450 for 12 minutes. Served with extra lemon wedges and well recieved all around my table! Thanks!
