I made this tonight and was surprised at how well it came out. It tasted good and was very easy to prepare. I will definitely make this again.

This recipe is a VERY loose interpretation of pad thai and should be titled as such. Peanut butter, mixed vegetables and cider vinegar do not belong in pad thai. I tried it anyway. It was very bad.

It was extrememly easy to make and even easier to substitute ingredients for whatever you have on hand. Also a great way to use up leftovers!

In this recipe I substituted tofu for the shrimp and it was great. The flavors combine to just make your mouth sing.

Wonderful meal... try substituting rice for noodles, also works great. Crunchy peanut butter is a good choice. Also try adding a beaten egg. Great flavor. Loved by all.

This came out great. Awesome flavor. I don't know that it's necessarily authentic, but that isn't really important. The taste was good, and that's what matters. I didn't have any chili paste, so I used chili sauce and it came out fine.

My family loved this more than me. I think it's because I was stuck on a more traditional taste. This is a light fun version and will be great for the summer.
