I cooked this dish last night for quests. I prepped all the veggies and sauces and left them out for display. All those colors were pretty enticing for our guests as they came through the door. The second the ginger and garlic hit the pans we had them salivating. Instead of water I used rice wine, which gave the dish an additional little bite. I also almost double the recommended crunchy peanut butter, chili paste and cider vinegar after an initial taste. If you want the flavor to be memorable rather than safe consider upping those ingredients in your recipe too. Hope you enjoy it as much as we did.

This was a simple, fast and very tasty recipe. It was not overly spicy and it had a very fresh flavor. My 5 and 7 year old loved it and asked for seconds. Great mid-week meal. As an added bonus, it is essentially a one pot meal.

Tasted awesome -
Few things differently (that we liked
-Replace water with fish sauce
-Added more chili paste (love spicey
-Used extra chunky peanut butter (no need to garnish
In any case, a great recipe to try!

This is one of the best recipes I've come across for Pad Thai. Nice blend of flavors. Yum!

I've never been terribly impressed with Rachael Ray's recipes, but this one was different. It was realtively easy and quite good. It might be a good idea to: 1 cut back on the chili paste if you're not big on the spicy stuff- my Iowa born husband reached for the water 2Add some salt- needs it! 3Only use 1 tablespoon of peanut butter- adds that hint of peanut taste, any more would have been overpowering. I recommend this one. Give it a go!

This recipe is awesome! It's pretty similar to what you get in a restaurant, although it's missing something that I haven't figured out yet. I add tofu and a scrambled egg. It's even better as left overs.

It was tasty enough, but this wasn't Pad Thai so beware if you are trying to be authentic. Save the peanut butter for the PBJs!
