This meal is delicious and easy to make when you are in a hurry. It also uses simple ingredients that most people have in their pantry.

We tried this recipe at home one night for dinner. It really could be more of a main dish as it is very filling. I actually halved the recipe, but still had lots leftover.

It turned out very good. We thought it could really be more of a main dish if we added Italian sausage or grilled chicken as well.

I followed the recipe exactly, but I was disappointed. It lacked flavor and "kick". In my Original Italian Cookbook there is a recipe called "Tuscan Tomato Soup" - also made with bread, but without beans - which I had cooked some time ago and which tasted much better than Rachel's recipe. It was more flavorful.

I must have made this once a week in the winter. What a great lunch for a cold winters day. Soooo Good! I make the meatballs when I am making it for dinner. Totally worth it.

This was sooooo good. I was skeptical with the bread in the soup and all, but it was insanly good! I used Italian seasoned crushed tomatoes, and for the bread i used Safeway's onion and garlic crusty bread. Those two additions made it so tasty! I read other reviews that said this recipe was sort of bland, so i added those ingredients and mine was certaintly not bland.

    1. ingredients should specify to reserve onions for later, topping off the served soup. one doesn't know this unless one thorougly reads the recipe first, therefore having to chop up another onion!
    2. seeing the original airing, recipe doesn't specify to add the stale bread into the soup-it doesn't say anything what to do about the bread at all.
    3. there is no picture
    4. as all or rachel's recipes, there is never a picture clipping to accomodate said recipe
    5. otherwise, the soup is absolutely delicious and simple to make

...but not my favorite. I also made the meatballs that she made on this episode, and I wasn't a fan at all. They were too bland. However, the soup was great. I just dipped the bread into my individual serving so it didn't get too soggy, since I wasn't using very stale bread. I also added a little cream and turned it into more of a creamy tomato soup.

This is one of the first Rachel Ray recipes I ever made and I absolutely love it. A definite favorite. I can't get past it!
