Very disapointing - rather tasteless and mushy.Rita

I followed the recipe and added a little more zip with cayenne pepper, however this is a great soup. Very smooth and doesn't have an acidic tomato taste that comes in canned soup.
My husband doesn't like tomato soup, but he loved this. Make sure you use the raw onions on top. Gives the soup a decided bite. I also tried it with cheddar cheese crumbles on top and it was also very good.

My sister and I were looking for a quick meal for a rainy night and I had just seen this show so we decided to make this on a spur of the moment at TJs. We didn't have stale bread so we toasted ours in the oven for about 15- 20 mins. Trader joe's didn't have small white beans so we used cannelini beans. We also added in some arugula to it instead of the basil (we forgot to buy that at the store. It turned out great. Very filling and delicious and super easy. I liked the arugula in it actually. If you wanted to make it non vegi you might add some italian sausage which I am going to try when I make it this week for my parents. very yummy!

The comfort flavors of my childhood! Not only did I have (almost! all of the ingredients in the house already, this was a cinch to make. I substituted 1 can of garbanzos instead of the 2nd can of white beans and used flat leaf parsley instead of basil. Worked great.

I love tomato soup and this one is very good! I used garlic cheese croutons instead of bread, gave it a nice crunch!

Absolutely Awesome! This recipe, like most of Rachel's, was extremely easy, quick, and tastes like a million dollars. You could easily fool your friends into thinking that you slaved over the stove with this one! Great for an evening alone or for entertaining guests. Probably my favorite recipe of Rachel's that I've made so far!

I liked this soup, but I can tell the group I served it to weren't entirely impressed. It really was just a very thick tomato soup and not much more. The bread was indeed very soggy, even being very stale. I agree with another reviewer and I may try it again adding some pasta instead of bread. Maybe that will help.

Very old world Italian. And easy!!! The beans make this a complete meal. And the Parmigiano-Reggiano is a must for this dish. Coupled with a nice antipasto, and a great bottle of wine, this meal is heavenly.
