    lower the heat. add a bit of panko to help hold cheese on and give some crunch. do the tomato sauce if u like tomatoes and lots of flavor, for me it made the dish. my sis didnt eat it and she loved it anyways though. brown both sides and if chicken is still not done throw a lid on the skillet for a few mins. u can also use cooking spray instead of evoo if u want to save on calories. dont give up if it came out wrong!! chefs cook on all top of the line products most recipes need to be tweaked to ur own equipment and tastes. this made a great sister night dish!

    This is my go to Chicken recipe. It's also good without the sauce. Leftovers are great in a salad or for Making your favorite Chicken salad.

    This recipe is great! really simple and delicious. I cut the chicken in half to make it thinner. the cheese didn't burn like other viewers said. My friend and I also loved the tomato sauce! I run out of fresh basil leaves and used dried basil instead, it was still good!

    The chicken was okay. I think it could have improved if I cut the chicken into one thirds. The chicken took forever to cook through and one of the thick pieces still showed a little pink after cooking it for 11 minutes. The cheese didn't burn but thats probably because I used grated parmesan in those containers from the cheese shop located in the grocery store. The chicken needs a little "kick" to its flavor. I thought the tomato basil mixture was okay, not that special. The potatoes needed an extra 5 minutes in my oven. Maybe I should stuff the chicken with the cheese next time.

    Made it for da hubs and a couple guests tonight and there's even enough for leftovers! I improved the tomato/basil bit with canned diced Italian tomatoes cause I suck at chopping things. Potatoes were kinda spicy, so the 2 year old didn't eat many of them. I might have went a lil over a teaspoon on the crushed red pepper tho..The cheese didn't burn because we put it on the right temp but mostly because the hubs helped. (I can't cook chicken to save my life. Agreed about the potatoes needing longer. We turned off the oven and let them cool while we finished the chicken and that seemed to be just enough longer for them. Also we butterfly-d the chicken so it was not as thick, but that's how we always do it because I'm paranoid about undercooked chicken.

    Was not crazy about this dish. Other viewers are correct... cheese burns before chicken cooks, smoke in the kitchen and the potatos needed about 10 minutes more. There was just nothing special here. Kind of boring. Love Rachel but didn't love this.... just short of ok.

    I am teaching my daughter to cook and she is doing a very good job. She is learning much about the details and tips that are often not mentioned in recipes. One lady made a most unkind comment saying non cooks should stay out of the kitchen. I don't agree! The kitchen is where people learn about cooking especially when they have a good attitude and patience. I do wish I would have read the reviews on this recipe before giving it to my daughter. I walked into the kitchen, which was filled with smoke, and smiled as I tried to comfort her! The cheese was burned, it stuck to the pan, and the chicken was pink inside. Like many, she did not know to split the breasts. The pan didn't need to be as hot as the recipe recommended. My family tried to eat everything and encourage her. With adjustments, this will be a good recipe. But each recipe should be written step by step for the many novices who watch the Food Network. The cost of food is very high and time is too valuable. We love Rachel. Perhaps this recipe should have been on another show rather than "It's Dinner, Not a Workout!" : Obviously for many this was a workout!!! The veggies were great!

    Very easy to make and super delicious! Didn't have any problems cooking the chicken, although I did slice each breast in half to make them thinner. Potatoes needed an extra 10 minutes of oven time to finish cooking. Otherwise, really great and easy dinner!

    Thanks to everyone who made suggestions on previous postings...it really helped. I definitely agree with everyone that said to dip the chicken in egg first before coating it with the cheese, the cheese stuck better. I used Freshly shredded Romano Cheese and it wasn't as salty as I expected. The tomato basil mixture was awesome -- I added a little EVOO to it and let it sit while I was making every thing else. It was a nice touch added to the chicken. My chicken did not stick to the pan -- used EVOO and watched it carefully so it would not burn. I also covered my pan while the chicken was cooking. One piece of advice: I used the amount of Crushed Red Pepper that it say to in the recipe and it was HOT. So if you don't like too spicy/hot, maybe use half of what the recipe says. I actually could have done with out the Crushed Red Pepper....I seasoned the potaoes with Tastefully Simples Seasoned Salt - very good. The potatoes had to cook for an extra 10-15 min than what the recipe says -- and they were perfect.
    I would definitley make this dish again...very good.
