    I sliced the chicken breasts in half, length wise, then pounded them before coating them in the cheese. Used a non-stick pan (as someone else had recommended & it was FABULOUS! The coating was crispy, chicken was tender...the fresh tomatoes & basil were the perfect accompaniment. Great flavor. Thanks for another winner Rachael!!

    We loved it! I did get thin sliced chicken breasts, thank goodness, even before reading the reviews, that's a must. Also, I believe the pan has to be hot, but not too hot, so the crust forms. A definite keeper, wonderful!

    Potatoes were great! Chicken was so bad I had to throw it out. Just like other reviewers noted, the cheese burned before the chicken was done. Smoke all over the house - had to open all the doors and windows. Terrible :(

    I'm 14 and a big Rachel Ray fan. My mom is teaching me how to cook and this was one of my first recipes. I loved the potatoes, and the chicken was really good too, although I didn't use a nonstick pan so the cheese stuck... I know somebody said not to use thick pieces of chicken, but I did, and it cooked in time but was slightly overcooked... Overall, my whole family loved it even though the chicken wasn't too pretty because of the cheese that stuck... I guess next time I'll learn from my mistakes because I WILL make it again! Oh, and it wasn't bland and didn't taste anything like fried chicken either.

    You have no IDEA how much you've helped improve the quality of food eaten in my house. I get off of work at 7:30 EVERY DAY and this is NO WAY I could EVER serve dinner at a decent hour without your help. This recipe scores MAJOR points with MY family. They love it and i love the amount of time I spend making it! The only thing better would be YOU cooking this FOR ME!
