If you are not a cook your probably gonna fail at just about any recipe you try...Common sense tells you not to use thick chicken breasts for this recipe. lol
And how can potatoes peppers olive oil and garlic be a disappointment? And I'm sorry but this recipe does not taste like any fried chicken I have ever made or had. I think some people should stick to take out and leave food up to those who know how to prepare it.... instead of telling the world what a disappointment a recipe is simply because they did not prepare it correctly.
Thankyou Rachael for this EASY & WONDERFUL recipe. I make it all the time and every guest I have ever made it for raves over it. I use thin cut chicken breasts or tenders because obviously a huge chicken breast wouldnt work.

This recipe was easy to make but offered a TON of flavor!
potatoes came out moist and tender. the peppers and garlic gave them wonderful aroma and taste..
chicken was tender and juicy with a nice crunch for the parmesan cheese coating and the tomatoes with basil salt and pepper lightened the dish up and made it fresh...,. I LOVE THIS

Made this recipe and the kids just devoured the chicken!!!!! Everyone loved the chicken. Didn't make the potatoes this time around, but next time I think I will try them. Will DEFINITELY be making this recipe again and again!!!!

I did read the reviews before I made this and decide to fry it in the olive oil until it didn't stick to the pan and then finish baking it in the oven. On the Wegmans website they also have a parm chicken recipe so to add flavor I followed their way of preparing the chicken. The flavor was great, my family loved it! I did not make the potatoes, to me this recipe should have a pasta instead of a potato.

My family really did not enjoy the chicken in this dish. My husband loved the potatoes but he loves anything potato. It just was not my cup of tea.
