there are changes I will make like i am going to mix the cheese with a little bread crumbs and make sure pan is red hot with enough oil which should solve the sticking to the pan problem. Also, no red pepper flakes (don't like spicy food using fresh tomatoes and onion Will make the potato as described above. Just a hint-if you don't like peppery food-don't use the pepper flakes, duh.
UPDATE: Just finished this meal for dinner-it came out outrageous. Very-Very easy-the trick is YOU MUST USE A NON STICK SKILLET- and it must be really-really hot so the cheese immediately crisps and the cheese has to be shredded not grated. I did use more than the recommended olive oil-but not a shred of cheese stuck to this pan.the raw sauce was excellent with my own tomatoes and my own basil.. I used thinly sliced prepackaged chicken breasts-so the cook time was short. Crispy, tasty and filling meal.

Great chicken! Very easy to make - turned out great! We eat chicken breast 3-4 times per week and this one will definitely go into the rotation. The only changes I made were to add some asparagus to the veg mix and I used jarred sun-dried tomato pesto in place of the raw sauce. Tasty stuff! Thanks Rach!
