    This has become a Christmas Eve Tradition in my house for family and friends. I extend the recipe by using more seafood. I add scallops, calamari and sometimes even lobster tails. It's beautiful and delicious!

    OMG this was soooo spicy and delicious I will say I started cooking the 15 min paella with couscous but decided I didn't want that one. I didn't follow the directions for this recipe and messed up. So I used the first half of the 15 recipe and the rice half of this one all by mistake! And wow it turned out great. I added mussels to the pot of meat and shrimp and the rice. Spicy and flavorful. I will mess this up again on purpose!

    I substituted arborio, halved the ingredients except the spices - it had great flavor and texture (I also swapped the mussels for pre-cooked shrimp. Very easy.

    Great and easy because I swapped out mussels with pre-cooked shrimp and used brown rice.

    If you're looking for a real paella recipe, this isn't it. But if you're looking to make a rice dish in 30 minutes it's fine. It wasn't seasoned enough for my family.

    I try this last night it was so easy to make and yet taste very good. Even my picky husband put a approve stamp on this recipe to be repeated in the near future. My 2 young daughters also loves it so much they have to ask when are we going to have this again? Mammy. The only thing i substitute is red pepper flakes which i don;t have so i use a little bit of Cayenne pepper powder to keep it not too spicy.

    Almost a five... what an easy and fantastic way to simplify a tough dish like paella and make it "everyday". The flavors in this dish are EXCELLENT. I would say that I'm not sure it makes 8 servings...maybe more like 6 depending on your appetite, but trust me...you won't have any leftovers!!

    This is a new Christmas Eve tradition for our family and friends. The green peas and red peppers add a festive look and its fun and adaptable for various allergies or likes/dislikes. I add scallops, lobster, and calamari. I also cook the chicken, chorizo, and seafood a little longer than it says to. It definitely takes more than 30 minutes, but it's fun for entertaining. It goes great with sangria!
