I really enjoyed this simple Pico de Gallo. Having a fresh salsa really does make a difference. I followed the recipe but found that I wanted more tomato than onion so I did 2 tomatoes instead of the one it calls for. The lime really keeps it fresh tasting and the cilantro makes it really authentic tasting.

When I first made this easy recipe, I tasted it and thought it might be too intense on the lime. When I combined it with chicken, though, it was outstanding. A friend who ate with us isn't a big fan of lime and onion and even she asked for more. I tweaked my own recipe a little, cutting back a bit on the onion and adding in a mild pepper just to mix things up. That's one of the nicest things about this pico...it's wonderful as is and versatile enough to please anyone's tastes.

This recipe was so good and authentic, my fiancee loves it and eats it right from the bowl with tortilla chips...very easy to make!!
