This was a huge success! Lovely, refreshing, light dessert for a mexican meal. I put a scoop of mango sorbet with it. Will definitely go into summer dessert rotation.

I needed a quick recipe for a game nite group. The recipe was very simple to make but I substituted sliced fresh strawberries and doubled the amount of kiwi that I had on hand. What little pineapple I had, I topped it off. I tried ginger spice instead of ginger root and it still turned out great!!

This was the perfect light dessert with cooling flavors perfect for summer! I added toasted macadamia nuts on top, wonderful!

Brought this to a party, and it was a hit. Everyone wanted the recipe. This was the preferred dessert over cookies and a berry tart. It had a nice refreshing flavor and was very quick to make.

I have made your salad six or seven time
since I first saw the show. The first time I made it just with your ingredents
and my daughter and I loved every bit.
Then I made it for my Parents an brother and sister-in -law,but I added strawberries, red and green grapes and that two was great. So, for the next several times I made it just like that. But, yesturday I made it for fathers day
and I added oranges to it, my Mother has made it since I made it for them she added everything I added first plus oranges and apples, for a lake party with eight other people and they all loved it and want the recipe.
I love your shows and watch them all everytime they come on. I have made several of your recipes, I have three of your cook books which I enjoy very much.
This recipe is so very good, I make a large bowl every few days and eat it a couple of times a day. Like I said everyone I have given it to loves it and has to have a copy of the recipe, plus all the ingredents I add to it. I know why you only used kiwi and pineapple in yours that's all you could do in thirty minutes, but I don't have to get mine done in thirty minutes.
Anyway, thank you so much for the recipe and for making so many people happy in Oklahoma with it.

    Sincerely a loyal fan,
    Valerie Allison

Simple, delicious and easy. We love this recipe and make it over and over again throughout the summer. Always a hit when we serve it...never any left-over! Yummy!

This has been a big hit. I've used the lime-scented coconut as a topping for other desserts, including sorbet. It's also outstanding if you grill the pineapple slices on an outdoor grill.

The recipe was good and everyone liked it.The only problem was the lime zest. It was really bitter and tough. I know it was something that I did wrong. I wish I knew what the problem was. Thank you. Steve.
