    I'm always looking for new slow cooker recipes that are quick & easy. I'll definately try this one. For someone who works outside the home, adding ingredients at the midpoint in cooking wouldn't be convenient. Hopefully it won't make too much difference adding the onions & thyme at the start. Thanks for this recipe idea.

    I tried this recipe once, about 5 years ago, and thought it would make a good slow cooker dish. I have been making it that way ever since. Here is how I do it:

    Slow Cooker Poached Chicken and Vegetables

    Ingredients:
    48 oz. chicken broth
    ? cup tomato sauce
    4 chicken breast cutlets, cut into large chunks
    4 carrots, peeled and cut into chunks
    2 stalks celery, cut into chunks
    4 oz. fresh mushrooms, sliced
    4 cloves garlic
    ? cup frozen pearl onions
    1 tsp dried thyme (or ? tsp fresh
    1 cup couscous, uncooked

    Directions:
    Place chicken broth in slow cooker. Add tomato sauce and whisk to combine. Add chicken, carrots, mushrooms, and garlic. Cover and cook on low for 3 hours.

    Add onions and thyme and cook an additional 3 hours. Put couscous into a small bowl. Add 1 cup of cooking liquid from slow cooker. Cover bowl tightly and let sit for 5 minutes. Remove cover and fluff with a fork.

    To serve, place couscous in a bowl. Remove chicken and veggies with a slotted spoon and place on top of the couscous. Spoon some of the broth over it if desired.

    Makes 4 servings.

    My husband and I simply loved this dish. Quick, easy, healthy and delicious - the total package. Only thing I did differently was to add a pinch of red pepper flake to the liquid while cooking and finished the broth with the juice of half a lemon to wake it up a bit.

    I also added the juice of half a meyer lemon to the couscoous when I added the broth for extra flavor. To dip the chicken I used chili garlic sauce. Wonderful, wonderful! I will make this over and over again. Just finshed the first batch and plan to make it again again tonight!

    I used a generous handful of peeled, whole baby carrots and fingerling potatoes, and added a pinch of pepper flakes and half a lemon. Delicious, quick and easy. Will add this to my quick dinner file.

    I've had this recipe for a while but just got around to using it and I'm so glad I did! I was trying to use up some celery and carrots from a previous dish. I waited so long to use it because it seemed like it might be a little bland, but it was delicious and so easy. The prep time was very quick, but I did let it simmer on low heat for a while so it was very tender when I pulled it off the stove. I used the extra simmering time to play with my daughter, even better than a 30 minute meal! We had no leftovers and it will definately become one of my frequently used recipes from now on. Thanks Rachel!

    I've made this at least a half dozen times now and it is delicious and easy to make. (I have made it TWICE with the companion Portuguese Stew featured in the same episode--the two dishes use most of the same ingredients and can be made simultaneously.

    I made a giant stew pot of the Poached Chicken for a church dinner last year and it was a huge hit. It was much hardier than the other soups--the big pieces of chicken make it much more filling than an ordinary chicken soup.

    This is a good recipe when you need something quick and easy. It's nice because your chicken, veggies and side dish are all combined and prepared at once, so there isn't much scrambling around. The time-frame listed in the recipe is perfect to get the chicken and veggies cooked to just the right degree of tenderness. Keep in mind though, that this is a simple dish, and is basically a quick, more substantial chicken soup. Too add some more flavor to the broth, I highly recommend adding pepper and paprika to make it taste a bit more like soup, and a little less like chicken stock. Also, I used a couscous that came with a flavor packet, and I found that it added some more kick to the dish. It's nothing fancy, but it's warm, savory, and a nice comforting meal to have after a day at work.

    This recipe wasn't bad, it just had no flavor. Kind of bland...I guess probably exactly what poached chicken should taste like. It was edible, I just wouldn't choose to eat it if I had a choice. On the up side, it was the fastest, simplest Rachel dish ever.
