    This Poor Man's Caviar may be adequate but that is all it is. My family has had a recipe for Poor Man's Caviar that was given to us by a Russian couple years ago. THIS is the real thing, lots of flavor!

    1 med eggplant, baked until soft, about 1 hour unpeeled at 350 degrees
    1 tomato, not too ripe
    2 small onions
    1/2 med bell pepper
    1 tablespoon lime juice
    1 tablespoon sugar 1/4 teaspoon each oregano and basil
    fresh ground pepper to taste
    2-3 cloves garlic (optional

    Chop eggplant. Saute chopped onions and tomato. Add all else EXCEPT bell pepper and black pepper. Simmer for 10 minutes. Remove from heat, add bell pepper and black pepper. Chill overnight and enjoy.

    This is particularily good on toast quarter with melted cheddar cheese on them.
