I just made the taquitos and they were very yummy and simple to make. They do need to bake for about 20 minutes though to get crispy enough. I also made Rachael's guacamole to go along side and it was outstanding, a perfect dip for these. I will be making these again!

I made the taquitos and they were yummy! I added some monterey jack cheese inside and that gave it some nice moisture that I think they needed. Flavor was great. I served them with a tomatillo salsa, sour cream, and guacamole .... tasted awesome dipped in the sauces!

The burritos were fantastic! The chipolte peppers gave it a great kick but they were a little too spicy for my kids, next time I won't put as many. This is A LOT of food, so make sure you have a crowd or are really hungry! The sauce was only OK, I could have lived without it, it was also a lot of sauce.

These were delicious! My daughters helped me cook them and loved it! I had never used the chipotle in adobo...yum! I will make these again and again. The zucchini is a great add in!

I only tried the taquitos for an appetizer and they were a hit with my family. I would make these over and over again. I will try the sauce next time. I didn't have the fire roasted tomatoes on hand. Way to go RACH!

We enjoyed making this recipe, we tried the burrito, used whole wheat tortillas and seasoned the meat a bit more with some cumin, oregano, cilantro, cut out the adobo peppers, it would have too hot for the kids. It was an excellent way to sneak in the zuchinni, considering that they really don't like that vegetable in particular they ate a pretty fair amount of it tonight, Will definitely use this one again.
