    Great! Very easy. I didn't have fennel pollen nor ground fennel but easily solved by putting fennel seeds into a coffee bean grinder. I did not have any calvados either and didn't think purchasing some for 11 dollars was worth it so I just used extra apple cider. Everyone is getting seconds as I type this up. I didn't make the rice that accompanies this but I just paired it with Uncle Ben's original long grain rice (the one in a box with the flavor pack that cooks for 25 minutes. Thanks Rachael, you never fail me.

    Just made this for dinner, what an amazing blend of flavors. The rice was fantastic and quite the complement to the pork. I was a little leery about the fennel rub on the pork, but what a tasty surprise. My husband said next time we should try and add Mandarin oranges to the rice.
