As promised by Ms. Ray, putting together this meal is pretty simple. I let mine simmer for longer than she prescribes for her 30 minute meal gig, and also added garlic, celery and frozen corn. The pumpkin nicely lends an added level of creaminess. Cooks up nice and thick, too. Had to buy tortilla chips to use up the leftovers.

Wow! I make a lot of recipes from the Food Network, and enjoy most of them....but you know how you have those few that you come back to again and again? Well, this is one of them! And the best part about it is that all the ingredients are pantry items! Keep on hand and whenever you get the craving (which trust me, you will often after trying this it's easily satisfied
