    I added some chopped garlic to the soup and used half and half instead of heavy cream. The result was delicious!

    Then I made it again, this time using a large acorn squash that I baked and mashed. Another real hit.

    This one's a keeper.

    Made this for the appetizer for the fam this last Thanksgiving and I must say this was one of the best soups I have every made. The cream really makes this soup taste so rich and creamy that paired with the relish makes it is really smashing. Kudos to Rachel for helping me make something out of the ordinary and helping make this a Thanksgiving to remember!

    If you like a pumpkin flavor, add another can of pumpkin. Without it, we found the recipe too bland and not as "pumpkiny" as we liked. With the addition of the pumpkin the soup was a hit. We served it for guests (breaking the rule about never serving guests a new recipe and they all loved it. It is very filling. Some said they could go from the soup right to dessert. Leftovers were as good as when it was fresh.

    I have never served soup at Thanksgiving before. This recipe looked so good on Rachel's program I had to try it. WOW! What a blend of flavors and the color is just gorgeous. I was a little concerned about the relish, but don't leave it out, it is what brings all the flavors together in the soup. Very simple to make even for the kitchen challenged like myself ;0
    I highly recommend this simple recipe that thanks to Rachel makes us look like kitchen Gurus!!
