This is a very quick, easy and delicious dish and as is can be done in 30 minutes. However the recipe needs 1/2 a diced onion and 1/2 a diced bell pepper to make it a true Cacciatore and give it the flavor it needs. After browning the chicken I deglazed the pan with 1/4 cup wine, let it reduce and then added the pepper flakes, onions bell pepper, sliced mushrooms and garlic. Reduce the beef broth to 1/4 cup and finished cooking it by adding 5 more minutes for the flavors to blend and thicken the sauce.

This dish proved to be quite delicious. My son and I searched the web for several chicken cacciatore recipes and we decided on this one. We followed the instructions verbatim with the addition of green bell peppers and a can of tomato paste. We only added the tomato paste because of some of the reviews saying that theirs turned out runny or separated. This dish was sooooo very flavorful and my son and I absolutely loved it. I am NOT sure why anyone would say that it was bland or even too spicy. The only spice would be from the crushed red pepper and in that case just leave it out of your version of this recipe. THANK YOU RACHEL RAY FOR MAKING ME APPEAR TO BE A REGULAR WOLFGANG PUCK!!!!!

Very good. I love mushrooms, but my family does not so I left them out. I took the suggestion of adding bell peppers and onions. I'll put bigger pieces of onion in next time. I did not add the broth as suggested. I added oregano, but forgot the basil. I'll add basil next time. I liked the texture of the chicken.

Wonderful recipe, with a few additions. I added a 1/2 cup of wine instead of broth, oregano, sage & a little basil. we love this!

I've made this recipe several times. I like it a lot and its very easy but do make some modifications. In addition to the mushrooms I also use green bell pepper and onion. I also use only about half the beef stock that the recipe calls for, so the consistency doesn't get too watery. After reading the reviews here I am also going to try adding basil and oregano for a little more flavor next time.

I don't know what this is, but it definitely is NOT, NOT, NOT, I repeat, NOT chicken cacciatore. Chicken cacciatore has sauteed green peppers and onions in it. This is seriously lacking in this recipe. It's like making it without the chicken. Also, beef broth? What? Did you just make this up randomly one night?

I usually love Rachael Ray's recipes, but this one tasted mostly like raw, canned tomatoes. I even tried to cook it longer to get rid of some of the raw tomato taste, but no luck. I will not be making this again.

This is actually a good quick chicken cacciatore, but I still prefer my moms recipe. It takes longer, but its worth it. This recipe is very good though, especially if you want a hearty dish quick.

I saw the "runny" notations and I don't carry crushed tomatoes in the pantry. I did have some Maderia in the cupboard. Instead of the beef stock I put in the wine and then reduced it to almost nothing. The 'shrooms were wonderful and I like the tomatoe bits of diced toms. I also added some onion powder.
I will make this again, great for a nuked lunch at work.
