I also add 1 cup or so of white wine after the tomato and cream is combined and warm along with garlic granules to taste and 2 TBSP of Butter
Made it last night for company and once again got incredible raves!

This was a great recipe. It was easy and everyone loved the taste. I will make this again. The leftovers were even better. Thanks Rachel for another great recipe.

It was extremely easy to make and it was better than any canned soup. I will make it again. I made it for my Father and he enjoyed it as well.

My whole family loved it including the 2 year old. I pureed the basil in the soup which was great!!

This soup is wonderful on a cold day. I boiled some orzo and added it in to add a little more substance. Turned out fabulous. My boyfriend loves it.

The easiest soup I've ever made. I don't know what 'concentrated' tomatoes are, so I used regular crushed. I also added a little butter for extra richness. Don't skip the toppers - they made the soup!

Oh my God! One of my favortie soups they sell at my local grocery store is Tomato, Basil, Gorgonzola soup and it sells for about $6/pint. I love it so much but thought it was too pricey so I looked for a recipe I can make at home. I can honestly say that this recipe is so incredibly easy and was so much better than the grocery market soup I have come to crave. I can't wait to go home and eat the leftovers. I didn't garnish the soup with the basil, I put it in and cooked the soup with it and next time I am going to add some gorgonzola and see how it comes out. Wow, I will make this one again and again and again.
