    OMG...was this ever tasty!!! Slightly on the salty side--will adjust seasonings a bit next time, but DEFINITELY a do-over in our house!!

    Fun to make, but took well over 30 minutes. Love the raisins added and am thinking next time out I will add more spices...maybe cinnamon or curry....

    Made this tonight and really enjoyed it! I used larger eggplants because that's all I could find at the supermarket, so half and eggplant per person was perfect! So delicious with fresh basil and parsley from the farmer's market. Whipped up some 5 minute cous cous as a side dish and a simple tomato/basil salad. Will definitely make this again!

    i don't watch Rachel all that much, but when I saw this recipe I knew I had to try it. It was divine! I strongly recommend it!     So good. I made this with what I had hand too. With ground beef instead of lamb and yellow squash instead of eggplant. Dried cranberries instead of raisins. I can't wait to make it with eggplant. Really delicious dinner.

    Delicious! I made a few changes due to what I had on had: veal instead of lamb and no nuts or raisins. Added a can of fire roasted tomatoes per another rater and it worked excellent. Also made it with orzo and, indeed, was even better the next day. I definitely recommend this recipe and will add it to my book.

    We really liked this recipe, it was delicious! I made a few changes based on what I had handy. I used dried cranberries instead of raisins, and roasted pumpkin seeds instead of pine nuts. I also used spinach instead of basil. It came out wonderfully, I will definitely be making this again both for family and for guests.

    I was surprised by the flavor of the dish. It was my first time ever cooking Eggplant, and I have to say that I will definitely use this recipe again. Thanks Rachel!

    I love you Rachael! But there's no way , guys, the cubes of eggplant can get tender in 10 minutes. I had to bake the mixture. It was great however once done!
