I made this for my family (including my husband who claims he doesn't like eggplant and everyone loved it!!! It is very flavorful and is a lovely presentation.

I made this tonight and loved it! I used extra lean turkey meat instead of lamb or beef, heart healthy margarine, and less cheese, to make it a bit healthier, and still thought the dish was full of flavor. Paired with the spinach salad in the same episode and there was PLENTY of food. I will make this again, for sure.

Excellent recipe - the sweet, savory and salty filling with the buttery breadcrumbs in the soft eggplant was divine. The only thing I changed was to add some red pepper flakes to the meat mixture and I used olives instead of cheese. Worth the effort to make the 3 components. Would definitly use the lamb vs. ground beef - it added a lot of flavor.
