    Yum!!!! Easy peasy, especially if you use pre-shredded non-frozen potatoes from the grocery store like I did! It was my first time making latkes and I was quite nervous. We made our own Matzo meal and had a lovely family gathering for Chanukah!

    This is almost exactly like I've been making mine for years and with rave reviews! I add a bit of garlic and flour as well as matzo meal and skip the baking powder. Also, I use the grater on the food processor for everything including the onions! Great cold, room temperature or hot. (by the way, these are not hash browns as another reviewer commented and ARE latkes! Eaten traditionally with sour cream or apple sauce and usually served along side of brisket especially for the first night of Hanukkah. YUM!!!

    YOWZA! This was a grest quick side dish. I did increase the carrots and onion so I increased the dry ingredients slightly to compensate. I also added garlic powder, smoked paprika and some cayenne to really increase the spice quotient. Tasty!

    This recipe was great! I titled it surprisingly good due to the weirdness of sour cream and apple sauce- but you HAVE to try it! Absolutely delicious! We plan to have the leftover latkes for breakfast tomorrow along with eggs!

    I made the Latkes with the Apricot chicken for dinner last night, and the meal is a winner! The entire meal actually took me about 20 minutes, start to finish. I only made one change, using "pre-grated" carrots from the grocery store, and used Simply Potatoes shredded potatoes. Then I just grated an onion, decided to add in a grated parsnip, too, and continued on with the recipe.

    The latke (and who knew they were so fast and east to make??? and the chicken together had my husband rolling his eyes and issung happy groans through the meal. Between the cripy potatoes and the tender chicken, we were both happy bunnies!

    If you're busted for time but want something different, try the Apricot Chicken and the Potato Carrot Latkes; the meal is a real keeper!!

    I used fresh potatoes from the garden and this turned out to be the best potatoe pancake recipe I ever tried. We will definately add this to the rotation of our favorite foods. They have a tempura-like taste to them. Delicious!
