    Never made latkes before or really fried anything like this but these turned out great!! Fried up easy and formed perfect pancakes. I used the shredded potatoes from the refrigerator section, not the frozen kind, and made sure they were really dry. Also left out the carrot and chopped the onion rather than grating it (it was easier that way. Served them with sour cream rather than applesauce. Impressed the heck out of my Jewish boyfriend!! He literally stood over the stove waiting for these too cool and ate at least half a dozen before dinner. (Served these with Tyler Florence's beef brisket which is amazing!!

    I love this recipe, because it saved me time and a mess shredding pounds of potatoes. This in it self is comforting. The taste on the other hand made me feel like I had come home. I found that I had to use an extra egg, but this could be a miscalculation on my part. Also it is important to wait until your oil is warm enough. This makes a world of difference. The warmed applesauce was a nice compliment.

    Once I got the temperature on the pan correct it went very easy. The cinnamon in the applesauce really makes a difference.

    I love potatoes and this way of making them was very good. The smell from the oil soaked into the whole house, so it smelled a little funky for a few days.

    I used sweet potatoes instead of hash browns. Be sure to squeeze out all water before cooking. Added some sage and white pepper. Omitted applesauce and cinnamon. Used just a bit of olive oil instead of vegetable. Deeeelicious!

    The flavor of the latkes was great! However, I would suggest pan frying them next time. It would be the same except with less oil. Also, I really liked them with sour cream, the applesauce I could have done without.

    This is a quick and simple recipe, especially if your crunched for time! I added some chopped chives for a little more flavor and found pre shredded carrots at the market. Made it even more simple! My husband loved the latkes and thought they were wonderful!

    I've never made Latkes before, so this was a new venture for me. They turned out great, and I'll definitely make them again. I didn't use the carrots, so I don't know if I was missing anything, they tasted great anyway! Especially with the apple sauce and sour cream on the side. As Rachael says, "Yum-O"
