Lovely salad. We're not big into balsamic vinegar so will probably try red wine vinegar and a hint of sugar next time.

This was great, I also sliced my squash and zucchini with a vegetable peeler into thin long slices like how Rachel did it on that episode. Nice and fresh summer flavors. A 10!

I watched Rachael make this on tv and loved the way she sliced her veggies. I did mine the same way she did (not like it says in the written recipe, with a vegy peeler so they came out long and thin like a very wide noodle. It was a beautiful presentation with the unusual colored tomatos and the wide sliced vegys. Did I mention it also tasted fabulous? It did! WIll make this many times this summer when I have fresh vegys from my garden to use.
