My family loved these peppers! They were so cute and delicious... I had some frozen tomato sauce from the summer and because of this, they were a cinch to prepare. The addition of the breadcrumbs gave the peppers a great texture. I also added in a link of italian sausage at the beginging, before adding the veggies. I will make these again!

I had some cooked quinoa - so I used that instead of breadcrumbs - the filling is amazing - haven't actually eaten the peppers yet! I was able to buy the ingredients at my neighborhood Farmers' Market yesterday - Definately recommend - will probably make the filling without stuffing the peppers - just a few less dishes!
