Ingredients
- 1 cup chunky prepared salsa, such as chipotle salsa
- 2 tablespoons extra-virgin olive oil, eyeball it
- 1 head escarole, chopped into small bite size pieces
- 1 (14-ounce) can red kidney beans, drained
- 1/2 red onion, chopped
- Salt and pepper
Directions
Combine salad ingredients in a bowl, toss and adjust seasoning.

i loved this salad, but when i make dressing using salsa, i always add fat-free sour cream. just makes it fuller and cling better. I would add chopped chicken to this for a lunch salad.

Loved this salad but made my own variation. Didn't have escarole, so I use roamine hearts. I also added some mayo to the salsa. It was then like a Tex-Mex 1000 Island Dressing
