i loved this salad, but when i make dressing using salsa, i always add fat-free sour cream. just makes it fuller and cling better. I would add chopped chicken to this for a lunch salad.

Loved this salad but made my own variation. Didn't have escarole, so I use roamine hearts. I also added some mayo to the salsa. It was then like a Tex-Mex 1000 Island Dressing

Very easy prep. Excellent and a great new variety for your family dinner salad. Try it!

I loved this healthful salad. I will definitely make this a lot, with many different dishes. The beans make it nice and filling.

I made this Memorial Day weekend for a picnic. Was a huge hit and it only took minutes to throw together.

Not my favorite. as for the rest of the family they didn't care for the dressing and the beans in the salad. Wouldn't care to make it again.

I didn't care for the salsa as a salad dressing too much.

This salad tasted horrible...Too bitter. Escarole is a green that should be cooked first and not eaten raw.
