My husband and I just got back from Italy and we loved the ribolitta in Florence, so I decided to try this recipe. It tasted amazing and was so easy! Definitely try this one!

On TV Rachael added kale to this soup. I did the same and kale is disgusting. It ruined the soup. I tried to get out as much of it as possible. The soup without the kale is good but the second day the bread is slimey.

GREAT soup. Unfortunately my roommate had forgotten to leave out the bread for it to get a little stale so it wasn't QUITE as thick as it could've been, but the flavors are just AMAZING. The raw diced onion and parmesan is the trick. I ate 3 bowls!

I have been trying to find ways to use up old Italian bread, and this was absolutely fantastic! It was easy and tasty. My boyfriend loved it and my co-workers were salivating when they smelled it being reheated.

Great soup, but heard for saving for leftovers. I would reccomend adding the bread each time you serve it, because it gets a little to soggy.

I tried this soup for my daughter who loves Rachael. I wasn't sure if I'd like it because I'm not a fan of tomatoes in soups. But the smell when I was cooking it was great! I tasted and fell in LOVE! It was so tasty. I make this a lot now. We like ours thick enough for the spoon to stand up. Try it you'll like it!
