Some of her variances to this recipe, she starts it off with pancetta, so I started with bacon. Other than that, I followed the recipe. Very easy. It was very good. She mentions to use the left overs as a hash with an egg which made me think it wouldn't be good heated up as a soup. My husband heated it up anyways and really enjoyed it as a soup. He said the bread made it almost have a creamy note.
