    This dish is quick and delicious. My dad is not a green bean fan, but he really liked them this way. I'll be making this again, both for an easy weeknight side dish and for fancier meals.

    I roasted 1lb green beans, 1/2 pint tomatoes, and 8 oz sliced button mushrooms with salt, pepper, and 1/2tbs of olive oil and WOW were they delicious! Arguably better the second day, hot or cold.

    the only thing i changed was i added a little sprinkle of garlic powder and onion powder to the salt and pepper mixture and then tossed it with the EVOO coated veggies... came out delicious! i will definitely be making this again!

    Very easy with a great result. I too used a healthy amount of e.v.o.o. I also added a sprinkle of garlic powder. Wonderful! I would definitely make these again.

    Overall, this recipe was extremely easy and delicous. The beans were perfectly done and the overall taste was very flavorful. The tomatoes were a bit tart but are currently out of season. We added a little chopped onion and will probably add some garlic next time. We used a healthy amount of olive oil. If you skimp with the olive oil, the beans might be a bit dry. My son, who hates green beans, loved the beans and tomatoes. We'll probably fix again tomorrow night to use up the rest of our green beans.
