    This is an average tomato soup. I followed the directions, but was disappointed. I thought there would be more eggplant/roasted garlic flavor but was lost in the roasted tomatos. It tasted all right, but nothing special.

    Excellent soup. Used 1/4 teaspoon pepper flakes and serve with crusty bread. Otherwise followed exactly. A wiiner

    Absolutely fabulous! I roasted a red pepper with the eggplant and garlic and added that and some italian seasoning - otherwise followed recipe exactly! Served with fresh ricotta and shredded parmesan on top. Delicious! Make sure you do the roasted garlic - it adds SO much flavor!

    I was very eager to make this recipe after hearing Rachael Ray say it tasted just like eggplant parmesan in a bowl, but I was disappointed. It is tasty, but it's nothing like eggplant parm. I'd call it a jazzed up tomato soup. Oh, and I completely agree with others - 1 tsp of crushed red pepper flakes is way too much, and I love heat.

    DELISH! My grocery does not carry whole fire roasted tomatoes so I had to make do with regular whole tomatoes (Gia Russa brand is $$ but good. This was perhaps the simplest most delicious soup I've had in a long time. The eggplant really gave it a depth of flavor. My freezer is stocked with soup on hand for the next month - yeah!

    I made the soup after watching rachael's show. I used red wine and dried basil. Fresh basil would definitely give a brighter flavor. Over all it was very easy and full of flavor. This recipe will get plenty of use.
