    This was great. I did cut the loin and put the filling in hte middle and wrapped it. Rather the cutting slits and filling them with pancetta mixture. We enjoyed the kale and polenta. I will cook the pancetta mixture first before stuffing the tenderloin.

    This pork is fabulous! I changed it up a bit and rolled the garlic and herbs on the inside and then tied the pork roast myself. I added more wine to reduce for a sauce. The pork is really juicy and flavorful! I also added 1/2 cup marscapone to the polenta to make it extra creamy. This is one of my husband's favorite meals. :
