    Very easy! Used jarred roasted red peppers instead. Added the peppers and tomatoes to pot to simmer and warm thru before using an emersion blender to smooth things over. Also added fresh basil. Was delicious and super fast. Its a keeper.

    This recipe gets four stars because there were some textural issues. As I was pouring the canned diced tomatoes and roasted red peppers into the food processor I thought, "Shouldn't these have been cooked together in the pot BEFORE I pureed them?" ...and sure enough, the texture was off as a result. It was not as "creamy" (for lack of a better word. But not to worry, another go around in the food processor after being simmered over a medium flame for another 15 minutes or so did the trick. The flavor is WONDERFUL and very pleasing. Soooo just make an adjustment in the steps of the recipe. PS - I selected this recipe for the soup. Not sure how the panini would turn out though if one chooses fresh ingredients I do believe it would be a nice accompaniment for this delicious soup.

    very tasty but the carrot needs more time to cook that 10 minutes. Suggest grating it if you're in a hurry. Panini delicious. I brushed outside of bread with olive oil prior to putting on grill.
