    Tossed the vegetables with mojo de ajo instead of plain EVOO. Smelled so good, I ate a bowl before they were half done!!! I could eat this every night!!!

    My family and I didn't care for this one-It didn't brown well like it does with a pan sear. I'll stick to garlic, salt, ground pepper and a skillet!

    I was thrilled to find a recipe for roasted squash that was a bit different form the usual. It's good, but TOO MUCH PEPPER! I couldn't even tasted the poultry seasoning for the pepper. I will definitely try it again and cut the pepper in half.

    This is so yummy although, I used squash, zucchini, bell peppers, and carrots and its so good! I will make this alot and try different variations of it. And I seasoned it with Mrs. Dash.

    Three stars for the recipe as listed, four with minor tweaks. I used italian seasoning as other posts state, and added a splash of red wine vinagrette for more zing. It was too plain without a dash of vinegar or lemon.

    My mother makes this dish but with italian seasoning. Very delicious but easy to overspice so go easy on the seasonings. The natural taste of the veggies really pop when I just use sea salt and garlic pepper (both freshly ground.

    Loved how the veggies browned up. Used a tuscan herb mix instead of the poultry seasoning, based on other posts. Maybe my squashes were on the small side? - the seasoning, salt and pepper quantities were too much for the amount of food. Next time, I'll cut way down. Still easy and delish.

    I made this for my family and while the veggies were great, no one liked the poultry seasoning on them. I'll continue to roast mine with garlic and paprika.

    Very Easy to make and oh so tasty. I did not have any poultry seasoning so I used about 2 tblespoon of Fini Balsamic Vinegar. Very yummy. This recipe was especially good for me because I got to use some of my own home grown squash. Next time I will add some eggplant.
