    We are a squash hating family. After we cleaned our plates of this recipe, this is the ONLY way I will cook squash. Throw in chunks of apples to sweeten the veggies even more. A definite hit in my family!

    My family and I thought this vegetable medley was delicious. I plan on using it as a side for many many other dishes. In fact, there were no vegetables left after dinner...only the main course. Good thing I used twice as much vegetables as it called for (used same for the rest. I recommend this one as a great all-purpose side dish.

    we used it for T-giving; excellent for make-ahead and re-heat for oordinating a meal for a large group. Especially liked the acorn squash addition. For easier peeling we parboiled the squash in the microwave in advance, then peeled and added towards the latter part of the cooking process to avoid mushiness

    This is such a quick, easy, healthy side dish to chicken because of the poultry seasoning. In one instance we only had green zucchinis and vidalia onions on hand .... it was still terrific. Everyone should try this once ... they're sure to add this to their recipe repertoire.

    I absolutely love this side dish. I make it all the time now because it's quick, tasty and healthy. I use whatever veggies I have on hand and it always turns out great. Thanks Rachel!
