My husband and I went on a 10 day, no meat fast. I tried this recipe and my husband and I thought it was great! The ingredients we inexpensive and the recipe was really easy to follow. The only change was that I used 2 eggs instead of 1. Definitely a keeper !

It was easy and quick enough and had all the right ingredients to feed young ones. I added some peas and cheese. A little chickpea flour also adds a bit of punch. Great for quick meals.

Easy and delicious! It was a little time consuming, but worth the effort. I added a half a bag of broccoli slaw to the mix to up the veggies and it was a big hit with my family.

My husband and I love these. I like that it's not just potatoes, and it has carrots and parsnips. I feel like I can have more. We love these!

I've made these before, from another recipe I found at the Food Network website. I just cannot remember who made them but it was several years ago. However, I give 5 stars for the concept, but not necessarily the ingredients Rachael used here. I used grated carrots, grated zuccini, yellow onion, 1 egg and about a tablespoon of flour, salt and pepper, and it came out perfect. No hash browns or parsley, etc. The amounts I used were about the same as this recipe so no adjustments needed to be made. I used regular vegetable oil for frying so use whatever you have. Some of these other oils, while they may be healthier, cost more and I don't know about you guys, but I don't have room for bottles and bottles of oil in my cabinet.

These turned into veggie crumble. If I were to do this again, I'd substitute mashed potatoes for some of the hash browns.

We're giving this a 4 because of taste, but not because of prep time... definitely took more than a half hour to make just 4-5 patties. Recipe should really call for one more egg and probably a tablespoon more of flour, otherwise patties will be quick to fall apart.
