I only made the dipping sauce and it was wonderful. A great hit! Instead of making sausage bites, I had some store bought kielbasa sausage on hand, and just sauteed it to render the fat a bit and served it with the dipping sauce which was quite great tasting!

I made this for my wine and cheese party and it was a huge hit. The best part, though, is the dipping sauce! I have been using the leftove sauce for EVERYTHING- veggie dipping, w/. crackers and cheese, and I bet it would be great w/ chicken tenders. The only ding is that the recipe makes WAY more dipping sauce than you need. You could easily half the dipping sauce. The recipe doesn't explain what to do w/ the onions! I removed them from the vinegar and mixed them back in w/ the sausage.

Rachel - thanks for your great recipes, you make me feel like a great cook! This recipe was fantastic. I served it at an election night dinner party and the 'bites' were gobbled up within 10 minutes! I served the same appetizer two nights later with the same wonderful result.
The recipe calls for twice the amount of sauce actually used.

I've made these twice. The first time I just used a sage sausage, and they weren't so great. The next time I used italian sausage and fresh sage, and the difference was huge. MUCH more flavor the second time. I also doubled the dip, and after all was made, I dumped the sausage bites and dip into my slow cooker, and let them simmer. Took them to a family get together and got rave reviews. It's a new favorite for me!

I'm not a huge sausage fan, but this is spectacular. The mild sausage combined with the tangy dipping sauce is a perfect combination. Quick and easy!
