    My husband doesn't like salmon and wasn't happy when I told him I was cooking this meal. Turns out, he loved it! Finally, a way to get him eat fish!

    My girlfriends are STILL talking about these salmon cakes and it has been almost a week since I made them. All the ingredients work beautifully together. *Note - instead of plating with greens, I plated with a chipotle sauce that I made to give it a Southwest kick. Made the sauce by using a bottled chipotle marinade/sauce and mixed in a 1/4 c. sour cream, 1/4 c. mayo and 2 tablespoons water. I heated this through and served warm. Just LOVELY!

    Terrific. Sionce we are on a low fat diet, I sprayed cakes with EVOO and baked 350" for 10 -15 min. Have also made it in a lightly oiled loaf pan and baked 375' for 30 min
