I substituted instant mashed potato flakes (my secret weapon for filling out meat mixture recipes. Egg substitute allows you to adjust the moisture level easier and is possibly safer because of cook time. The potato flakes take on the salmon taste without competing for texture if you use some of the juice in the canned salmon. Extra patty or two for second helpings!

I didn't make this recipe exactly but was certainly inspired by the ideas from it. I used another salmon cakes recipe - those changed it as well to include the roasted red peppers, the salad greens were what I had on hand (baby fields greens with herbs but the dressing with the oranges and onion was fantastic!!! I also used another scones recipe (just because I didn't have the boxed biscuit mix I think it one of Ina's, but used the rosemary, orange zest and crisped bacon (instead of ham. OMG!!!! Those were the best scones EVER!!!!! Though Rachel tends to annoy me, she certainly has some great ideas at least to base a great meal from. Thanks Rachel for the inspiration!

Don't even THINK about skipping the lemon zest for some pale substitute. It's the secret

Ended up looking like a salmon version of corned beef hash. Cakes did not hold together. Probably needs more egg.

This is one of DH's favorite meals. So easy to put together, and soooo delicious! I used the salmon in pouches; Bumble Bee and Chicken of the Sea both offer them. The salmon is cleaned beautifully!

The scones are great, too! A perfect spring meal... even in winter!

The salmon cakes were tasty, but they fell apart very easily when cooking. Next time I would only use 1 can of salmon because 2 cans seemed like way too much for only 4 patties. Also I just used baby spinach and romaine hearts in my salad and it was great. Don't skip the orange though, it completes the whole meal and gives it that extra something special.

These were delicious but tasted a little salty and I didn't add any salt. Next time will try with just plain bread crumbs.

I seldom follow a recipe to exactness, but this one, I did - well, I did use whole egg. Perfect - nothing else to say. Because I had it on hand, and because I could, I did add some green onion tops. And thanks to the reviewer who said NO MORE SALT. She was right! The Old Bay has enough. As for BONES, look for Honey Boy Red Salmon with the black label - it's about 1.00 more/can, but it's your choice....
