    I have made the Avacado Smash instead of guacamole since the first time Rachel did this. My family loves that they get some chunks of avacado. This is great and easy !!!

    My family raves about this soup! The kids love the quesadillas and Daddy and Mommy love the soup as its fairly healthy. This is a forgiving recipe; I can leave something out or add something new and it always tastes good. For example, I like to add some carne asada stake to the quesadillas and I omitted the celery because that doesn't sound like it would taste good in salsa. Overall, one of our favorites.

    I never got the chance to make the quesadillas, but I did make the stoup. It is delicious. My daughter practically ate the whole thing in one day!

    I added a twist to this delicious yet easy recipe. I added three different types of chopped chorizo after salting the veggies and before adding the tomatoes into the Salsa Stoup. Simple DELICIOUS and great for meat lovers!!!

    Excellent- huge hit with the hubby! Took quite a bit longer than 30min, but that might be more to due with the curious beagle at my feet than the recipe...
    Note: You can give this a kick by using canned jalapenos instead of fresh. It will take less time to cook them down in the soup so the flavor blends better throughout. I chop a 1/4 cup and toss them in a few min after the rest of the veggies have gone in.

    I loved this soup and have made it several times. I find it works great when I take a large can of crushed tomatoes and a small can of diced Fire Roasted tomatoes to give it a bit of a molten flavor. I put scallions in at the end for some texture and flavor.

    The avocado smash is wonderful and less fattening with greek style yogurt instead of sour cream.

    I've made it for people who are typically not into Southwestern cuisine and they seem to really enjoy it. It's also a great vegetarian alternative for many. I always cook my soups 2 hours and the flavors really meld together well. This is no exception.

    The soup is so good....next time I would add another jalapeno and one more bell pepper and take away a celery stalk. The stewed tomatoes make it delicious and the avocado smash is amazing. I hate cilantro so I left it out and no one missed it! I would not make the quesadillas next time, way too cheesy. Just use tortilla chips instead and throw the cheese in the soup.
