This was amazing!!! Made half the recipe for my family and used homemade turkey sausage and skim milk. It was so good and good for you!

I am not usually a fan of Rachael Ray recipes and don't make them that much. I just happened to see this episode and thought it looked so good I had to try it and I'm so glad I did. I couldn't find frozen butternut squash but I bought a generic box of "winter" squash which I thought was very close in flavor. I used spicy turkey sausage and instead of fresh thyme I used dried tarragon which was really good. I used shell pasta because that's what I had on hand and it was perfect I thought. Overall a great dinner. I undersalted the sauce a little bit but that was my own fault. Easy and fast to make!

I decided to modify this recipe for less calories and gluten free. Thank goodness for Bionaturae gluten free pastas first of all. I used low fat ground chicken instead of sausage, all-purpose gluten free flour for the roux and almond milk for the milk. After adding the butternut squash to that I was a little scared but it gave the squash just what it needed as I did not use salt except when cooking the pasta. I snuck in my favorite rub and and some Sraicha. I only used 4 slices of cheese and the pecorina and romano at the end. Exceptionally comforting and healthy. I am so glad I tried it. Even my wheat eating brother said he couldn't tell the pasta wasn't the usual. Yummy!

This is delicious. Very flavorful, easy, takes a little longer than 30 mins. cause we don't have a prep staff but worth the effort. I also roasted my squash ( a turban . It is fantastic.

Good, fairly quick dinner for a Monday night. Used roasted garlic chicken sausage from Trader Joe's and cut into half slices rather than crumbled. Sautéed sausage along with the onion. I also used white sharp cheddar, didn't have much Romano cheese so I used whatever I had on top. Will make this again- very smooth and comforting!

Made this for dinner tonight and its actually really good. Im usually not a fan of RR recipes. They always tase over seasoned, or underseasoned, so I pretty much gave up on trying her recipes. I saw this epi. on Saturday and thought it looked pretty good. Not only is the recipe good, but I was turned on to a veggie that I never tasted before. I couldnt find the puree butter nut squash, so I had to roast mine in the oven and puree it myself. I had never had BNS before so after it was done roasting, I tasted it. Its really good! Anyway, this recipe was easy, but it always takes me wayyyyy longer to cook the food. IDK, I guess im not as fats as her. Very tasty!

Really great comfort food! I used the big rigatoni and needed to add cook time to get them to the right tenderness. I did use sage instead - perfect. I used a butter substitute and was grateful that it didn't affect the consistency of the roux. I used a bit less sausage, and used half the cheese amount but with grated parm. reg. instead of cheddar (very good. We will definitely make this again.
